Samosa recipe

The dough: a cup of flour, and for oil—
three tablespoons—and salt to taste. And keep
a quarter cup green peas and tablespoon of each
red chili, mango powder, cumin seeds
and ginger paste—keep three potatoes mashed—
keep onions diced, green chiles sliced and oil
with which to fry them all together. Then
mix the dough and keep it dry; and when
the peas are salted, cooked, then heat some oil
and fry the onion, spices, chiles, mashed
potatoes for a minute. If it needs
a little water, that’s okay. Then breach
the dough eight ways and wrap the filling; keep
samosas cold till frying them in oil.
