any of you guys know any of you know what kind of stuff I should show profs that would impress them?

no idea what's academically 'cool' these days, but for sure you have to show them technically perfect stuff (grammar, spelling, form)
Go for your stuff with most originality and then clean them up.
(Are you trying for a creative writing program? If so, check out which schools won't kill your creativity)

creative writing at concordia... I am not sure what stuff of mine would even be safe to put in. I am a bit frustrated about it... I am not worried about them saping my style or what ever, but I need to get published.. thanks for the advice--I'm just gonna write a new 20 or so page story and pass it in. But they'lll probally just think I am stupid ass drunk...
